Sugar beat is now used instead of sugar cane.

Sugar is made by processing.

There are many types of sugar:

Caster - fine grained, suitable for creamed cake and other mixtures.

Others include brown, demarara, icing, black treacle, golden syrup, glucose and honey.

Sugar is used mainly as flavouring.

Sugar is used for caramelisation - heating and then melting. It gives a brown colour.
